Eggless Milk Powder Cake with Mango Yogurt Frosting using Nura Super Instant Full Cream Milk Powder
- Ingredients
For the Cake
- 1 cup all-purpose flour (maida)
- ½ cup Nura Super Instant Full Cream Milk Powder
- ½ cup granulated sugar
- ½ cup plain yogurt (curd)
- ¼ cup vegetable oil
- ¼ cup milk (adjust consistency)
- ½ tsp baking soda
- 1 tsp baking powder
- ½ tsp vanilla extract
- Pinch of salt
For the Mango Yogurt Frosting
- ½ cup mango pulp (fresh or canned)
- ¼ cup thick plain yogurt
- 2 tbsp Nura milk powder
- 1–2 tbsp powdered sugar (adjust to taste)
- Optional: mango cubes or mint leaves for garnish
- Directions
Make the Cake
- Preheat oven to 170°C (340°F). Grease and line a loaf or round cake tin.
- In a mixing bowl, whisk together: Yogurt, sugar, and vanilla. Let it sit for 2–3 minutes until sugar dissolves.
- Add oil and mix until smooth.
- Sift in flour, Nura milk powder, baking powder, baking soda, and salt.
- Gradually add milk and mix until you get a smooth, lump-free batter.
- Pour the batter into your prepared tin.
- Bake for 30–35 minutes, or until a toothpick comes out clean.
- Let it cool completely before frosting.
Prepare the Frosting
- In a bowl, combine mango pulp, yogurt, Nura milk powder, and powdered sugar.
- Mix until smooth and creamy. Chill slightly for a thicker consistency.
Assemble
- Once the cake is cool, spread the mango yogurt frosting on top.
- Garnish with fresh mango cubes or mint leaves if desired.
- Slice and serve chilled or at room temperature!
